Our menu last night included a new recipe for Swiss Chard. I had hoped since it included bacon AND Parmesan cheese, the fellows would not realize the good stuff they were eating until it was too late! Wrong! The table talk included:"Okay, be prepared to be impressed!" just before trying a first bite. When asked for an evaluation this was also heard: "Well...... the bacon and cheese are really good." So for those of us who like to try new things and are willing to appreciate the earthy taste of the bright colored leaves, this recipe should serve us well.
Swiss Chard with Bacon and Garlic
Prep Time:30 min. Cook Time: 20 min.
2 slices bacon, chopped
2#'s Swiss chard, coarsely chopped with bigger stems removed
2 cloves fresh garlic, minced
1/3 c. shredded Parmesan cheese
1. Preheat oven to 350'. Cook bacon in a skillet until crisp; drain on paper towels. Pour off fat from skillet.
2. Cook Swiss chard in same skillet over medium heat until chard begins to wilt. Add garlic and cook, stirring, 2 minutes.
3. Place chard in a lightly greased baking dish; sprinkle with bacon and parmesan cheese.
4. Bake 15 min or until the top is golden brown.
